This wholefood dessert is packed full of goodness. The walnuts provide you with anti-inflammatory Omega 3 fatty acids, and the oats and apples are a wonderful source of fibre. Blueberries are high in antixodants and have been shown to assit with focus and help to reduce anxiety. One serving will provide you with a daily serving of fruit.

In this recipe I have used frozen blueberries that I thawed a little first and drained the excess fluid before adding to the baking dish. The fluid makes for a great blueberry drink! You can also add a teaspoon of chia seeds to the fruit mix for added fibre and omega 3.

Crumble Topping

  • 1/2 cup Walnuts

  • 1/2 cup Quick Oats

  • 1/2 cup Dessicated Coconut (plus a little more to sprinkle on top)

  • 100 grams Butter (melted)

  • 1 tsp Sea Salt

  • 1 tsp Vanilla Extract

  • 1 tbsp Cinnamon

Fruit Base

  • 2 Green Apples (cored and chopped into small pieces)

  • 2 cups Frozen Blueberries (frozen or fresh)

  • 1 tbsp Cinnamon

  • 1 tsp Vanilla Extract

Directions

  1. Combine walnuts, oats, desiccated coconut, butter, salt, vanilla essence and maple syrup into a food processor and combine.

  2. Mix together chopped apple, blueberries, vanilla essence, and cinnamon in a baking dish.

  3. Spread the crumble mixture over the top using wet hands or the back of a spoon to smooth it out. Sprinkle the top with more desiccated coconut.

  4. Cook at 180 degrees for 45 minutes.
