These oats were so tasty and satisfying!

I did my overnight oats recipe and layered on slices of ripe banana, raw cashew nuts, and melted Biscoff spread.

Overnight oats are a real treat for your good gut bacteria as they contain beneficial fibre (both soluble and insoluble), resistant starch (which multiples by about 3 times when prepared this way), and prebiotics. Pepitas are rich in vitamins and minerals like manganese and vitamin K, both of which are important in wound healing. Banana's are rich in fibre and nutrients and will help to keep you satiated throughout the day.


  • 1/2 cup oats

  • 3/4 cup of your choice of milk, I used soy

  • 1 tbsp flaxseeds

  • 1 tsp pepitas

  • 1 banana

  • A handful of raw cashews

  • 2 tsp Biscoff spread


1. Combine all ingredients except the toppings in a small container.

2. Cover the container and place it in the fridge overnight.

3. In the morning give it a good stir.

4. Top with chopped banana, cashew nuts, and some melted Biscoff spread

5. Enjoy!
