Ingredients

  • 3 pears cut in half and cored

  • 3 apples halved and cored (I used red lady apples but you can use whatever you have in the fridge, I'm all about non-waste)

  • 1 cup quick cook oats

  • 1/4 cup chopped pecans

  • 1/4 cup mixed nuts and seeds, desiccated coconut, cacao powder, cinnamon (get creative here)

  • 2 tbsp melted coconut oil

  • 2 tbsp maple syrup

  • 1 tsp cinnamon

Directions

  1. Preheat oven to 180c.

  2. In a medium bowl, mix oats, pecans, nuts, seeds, cacao, desiccated coconut, coconut oil, maple syrup and cinnamon. Stir to combine.

  3. Cut pears and apples in half and then core with a paring knife or melon scooper. Place pears and apples into a baking dish.

  4. Fill fruit with the mixture, you will have some mixture left, save it for serving or as a yoghurt topper (yum!).

  5. Cook for 45 minutes. Let cool slightly.

  6. Serve with a dollop of coconut yoghurt and a sprinkling of cinnamon!
