It's been a big year for us here, after thinking things would settle after covid. I'm still recovering from an episode of dengue fever plus I was unexpectedly awarded a scholarship to learn front end development with Code like a Girl so I'm learning to create my own apps which is very exciting as I'm brimming with ideas!

I wanted to find something interesting to make for our festive edition on the blog and came up with this coconut and fruit semifreddo, so so delicious it's hard to stop eating! It melts very easily so only take it out of the freezer when you're ready to cut and serve.

Ingredients

  • 320g coconut condensed milk

  • 300ml thickened cream

  • 825g fruit salad

  • 150g glace cherries

  • 1/2 cup slivered almonds

Directions

  1. Use a hand blender to whip together the cream and condensed milk.

  2. Drain the fruit salad and add to the cream along with chopped glace cherries and slivered almonds.

  3. Pour into a lightly oiled silicone mold and cover with cling wrap. Place in the freezer overnight to set.

  4. Remove from the fridge just before cutting and serving.
