This cheap and cheerful winter warmer is quick and easy, you could pull it together in 30 minutes. The legumes and spices are great for your gut health and help to lower cholesterol. It's a staple I like to keep in fortnightly rotation!

Ingredients

  • 2 cups red lentils

  • 6 cups room temp water

  • 2 tablespoons olive oil

  • 1 tsp cumin seeds

  • 1 cinnamon stick

  • 1 large diced onion

  • jalapeno slices to taste

  • 4 garlic cloves finely chopped

  • 2 tsp fresh ginger root

  • 1 tsp turmeric

  • 1 tsp ground cardamom

  • 1 tsp paprika

  • 1 teaspoon salt

  • 1 tomato diced

  • juice of 1/2 a lemon

  • half a bag of fresh baby spinach

  • 1 can chickpeas

  • coriander to garnish

Directions

1. Cook rinsed lentils over a gentle simmer for 20 minutes.

2. Heat the oil and add the cumin seeds and cinnamon stick for a few minutes or until flagrant.

3. Add the onion, jalapenos, garlic, and ginger and cook for 4-5 minutes until the onions become translucent.

4. Add turmeric, cardamom, paprika, salt, and tomato. Cook for a few minutes or until the tomato falls apart. Discard the cinnamon stick.

5. Once the lentils are cooked drain any excess water sitting on top and stir in the spiced onion mix. Add chickpeas, spinach, and lemon juice and stir well. Add salt as needed. Add more water if required.

6. Garnish with coriander.
